Chicken Bites with Marasmius Mushrooms, White Wine and Parmesan

This easy and flavorful chicken recipe is perfect for a quick homemade meal. Tender chicken bites are cooked with mushrooms, white wine, aromatic herbs, and finished with grated Parmesan for a rich and comforting dish.

Ingredients (1 serving):

  • 180–200 g chicken breast
  • 150 g mushrooms (jarred or fresh)
  • 50 ml white wine
  • 40 g Parmesan cheese, grated
  • 20 g butter
  • 1 garlic clove, finely chopped
  • Fresh thyme
  • 1 spring onion, chopped
  • Olive oil or sunflower oil
  • Salt, to taste
  • Black pepper, to taste

Instructions:

  1. Cut the chicken breast into bite-sized strips. If using jarred mushrooms, drain them well. Finely chop the garlic and spring onion.
  2. Heat olive oil (or sunflower oil) together with the butter in a pan. Add the chicken and fry until golden brown. Add the mushrooms, sauté briefly, and season with salt and black pepper.
  3. Add the chopped garlic, stir, then pour in the white wine. If using jarred mushrooms, add a small amount of the marinade as well.
  4. Add thyme – if dried, add it shortly after the wine; if fresh, add it at the very end before removing the pan from the heat.
  5. Once the wine has evaporated, add the spring onion, sauté for about one more minute, then remove the pan from the heat.
  6. Serve the dish on a large plate, grate Parmesan cheese on top, and garnish with cherry tomatoes and fresh thyme if desired.
  7. Enjoy your meal!
