Chicken Bites with Marasmius Mushrooms, White Wine and Parmesan
This easy and flavorful chicken recipe is perfect for a quick homemade meal. Tender chicken bites are cooked with mushrooms, white wine, aromatic herbs, and finished with grated Parmesan for a rich and comforting dish.
Ingredients (1 serving):
- 180–200 g chicken breast
- 150 g mushrooms (jarred or fresh)
- 50 ml white wine
- 40 g Parmesan cheese, grated
- 20 g butter
- 1 garlic clove, finely chopped
- Fresh thyme
- 1 spring onion, chopped
- Olive oil or sunflower oil
- Salt, to taste
- Black pepper, to taste
Instructions:
- Cut the chicken breast into bite-sized strips. If using jarred mushrooms, drain them well. Finely chop the garlic and spring onion.
- Heat olive oil (or sunflower oil) together with the butter in a pan. Add the chicken and fry until golden brown. Add the mushrooms, sauté briefly, and season with salt and black pepper.
- Add the chopped garlic, stir, then pour in the white wine. If using jarred mushrooms, add a small amount of the marinade as well.
- Add thyme – if dried, add it shortly after the wine; if fresh, add it at the very end before removing the pan from the heat.
- Once the wine has evaporated, add the spring onion, sauté for about one more minute, then remove the pan from the heat.
- Serve the dish on a large plate, grate Parmesan cheese on top, and garnish with cherry tomatoes and fresh thyme if desired.
