Ce fromage est servi avec des fruits frais et des noix, en garniture sur une salade d\u2019endive, melang\u00e9 \u00e0 une farce de pommes de terre au four ou encore servi sur du poisson ou du pain grill\u00e9s.<\/p>\n<p><strong>Cantabria<\/strong>, du nom de la r\u00e9gion Cantabrie, est un fromage cremeux fabriqu\u00e9 avec du lait de vache. Sa cro\u00fbte est d\u2019une couleur jaune p\u00e2le et sa p\u00e2te est moelleuse. Cantabria a un go\u00fbt doux et frais et il est servi avec des fruits confits et du x\u00e9r\u00e8s.<\/p>\n<p><strong>Idiazabal <\/strong>est fabriqu\u00e9 avec du lait de brebis tr\u00e8s gras. Sa p\u00e2te est dure et ferme, sa couleur jaune p\u00e2le. L\u2019affinage d\u2019Idiazabal qui dure deux mois, lui donne un go\u00fbt intense et fort. Ce fromage peut \u00eatre servi avec des poivrons grill\u00e9s, des tranches d\u2019orange, du serrano, du pain arros\u00e9 avec d\u2019huile d\u2019olive, des tartes \u00e0 la piperada ou des manzanillas vertes.<\/p>\n<p><strong>Li\u00e9bana <\/strong>est le nom donn\u00e9 \u00e0 plusieurs sortes de fromages, tous faits de lait de brebis ou de ch\u00e8vre ou encore de vache ou d\u2019un m\u00e9lange entre eux.<\/p>\n<p><strong>Manchego<\/strong> est le fromage espagnol le plus connu.Il est originaire de la Mancha, terre de Don Quichotte. Ce fromage au lait cru de brebis manchega a une p\u00e2te ferme et une cro\u00fbte de couleur paille. Traditionnellement on sert une tranche de manchego avec un peu de confiture de coings. Dans la province de Mancha, on trempe le fromage dans un m\u00e9lange d\u2019ail, d\u2019harbes fra\u00eeches et d\u2019oeuf. Il est aussi servit avec des fruis : p\u00eaches, poires, figues, pommes. On peut pr\u00e9parer le manchego avec de poivrons rouges au four et du serrano ou avec du jambon fum\u00e9.<\/p>\n<p><strong>Mah<\/strong><strong>\u00f3<\/strong><strong>n<\/strong> a \u00e9t\u00e9 la sp\u00e9cialit\u00e9 de l\u2019\u00eele de\u00a0Minorque, aux Bal\u00e9ares, non loin de Majorque. Il \u00e9tait un fromage saisonnier \u00e0 base de lait de brebis et parfois on y ajoutait une petite quantit\u00e9 de lait de vache. Aujourd\u2019hui le mah\u00f3n est compos\u00e9 de lait de vache avec parfois un peu de lait de ch\u00e8vre. Le fromage, fabriqu\u00e9 deux fois par jour apr\u00e8s la traite, et affiner pendant un mois. Ensuite la peau de mah\u00f3n est est mise \u00e0 tremper dans un m\u00e9lange de beurre, d\u2019huile d\u2019olive et de paprika et on laisse vieillie le fromage encore un mois. La p\u00e2te du fromage est ferme et sem\u00e9e de petits trous. Traditionnellement il est servi en tranches, arros\u00e9 d\u2019huile d\u2019olive et saupoudr\u00e9 de poivre et d\u2019estragon. On peut aussi le pr\u00e9parer en souffl\u00e9 avec des oeufs.<\/p>\n<p><strong>Roncal<\/strong> est l\u2019un des meilleurs et des plus chers fromages d\u2019Espagne. \u00a0Depuis 1981, il b\u00e9neficie de l\u2019appellation d\u2019origine. Sa p\u00e2te est ferme et l\u00e9g\u00e8rement piquant, sa peau a un couleur de paille. Le roncal est fabriqu\u00e9 avec du lait de brebis rasa qui sont petits et bien adapt\u00e9s aux conditions climatiques de Roncar en Navarre, en altitude dans les Pyr\u00e9n\u00e9es.
